˝ cup grass-fed butter
4 onions, sliced lengthwise
2 cloves garlic, minced
2 bay leaves
thyme sprig
Kosher salt and freshly ground black pepper
Red wine, about ˝ bottle
3 heaping tbsp flour
2 quarts beef bone broth
Baguette or ciabatta
Gruyere or provolone

Directions:
Directions:
* Melt butter in dutch oven or large pan. Add onions, bay leaves, thyme; sauté caramelized, about 25-30 min.
* Add wine and cook until evaporated.
* Add flour and stir until onions are coated.
* Turn heat down to med-low and cook for 10 min or so until flour is brown.
* Add beef stock and simmer for 15 min or so, stirring frequently.
* Add salt, pepper, parsley, garlic powder to taste. Remove bay leaves and thyme sprig.
* Place sliced or grated gruyere or provolone on top of each slice of bread. Broil for about 4 mins until cheese is bubbly and starting to brown. Place the cheesy crouton on top of each bowl of soup. Enjoy!
