Mom's Pineapple and Pudding Cake Recipe

1 Box Jiffy Yellow Cake Mix
1 Large Box of Vanilla Pudding - If you really like pudding you can double the pudding and the cream cheese
1 Pkg Cream Cheese
1 Large Can of Crushed Pineapple
1 Large container of Cool Whip

Directions:
Directions:
Make the cake mix per the directions on the box. Pour into a large 9" x 13" cake pan. It will only take about 10 minutes to bake so keep an eye on it. Let it cool. Do not take the cake out of the pan. You will just add everything on top of the cooled cake.

Let the cream cheese come to room temperature and then put it in the mixer and mix until smooth.

Make the pudding as directed and then add into the cream cheese mixture. Let it set up in the refrigerator for an hour.

Once the cake has cooled, spread the pudding/cream cheese mixture on the top of the cake. Then put the drained pineapple on top of the cream cheese. Then spread the Cool Whip on top of the pineapple.

Keep this dessert in the refrigerator.

NOTE: If you don't care for pineapple you can dice fresh strawberries and bananas or any other type of fruit and put that on top of the pudding/cream cheese mixture. I've used blueberries, bananas and strawberries and it was delicious. You could use canned or frozen fruit. Just make sure that you have drained the canned fruit or let the frozen fruit thaw. Then pat down the fruit with paper towels to soak up any remaining juice. You don't want a soggy dessert.

I made this and took it to the Tumbleweed one year for Michael and Chris's birthday. I made it with double the pudding/cream cheese and used strawberries and bananas and everyone raved about how delicious it was.
