3lbs Ground Turkey
Sea Salt and Fresh Ground Pepper
3 Garlic Cloves Minced
2 Medium Onions- Chopped
2 Green Bell Peppers- Chopped
Half Handful of Hot Chili Powder (eyeball it)
Half Handful of Ground Cumin
1 teaspoon Ground Coriander (to taste)
1 teaspoon Sweet Paprika
1 tablespoon of Oregano
1/2 teaspoon Red Cayenne Pepper- Optional
1 28-oz Can of Whole Tomatoes- Crushed by Hand
1 14-oz Can Whole Tomatoes (on hand in case you need more)
1 bunch green onions for Garnish
Shredded Cheddar Cheese for Garnish

Directions:

In a large soup pot, add a little olive oil, the garlic, and brown the ground turkey-once that's almost cooked through, add the chopped onions and peppers. Then stir in the cumin, coriander, chili powder, oregano and paprika.

After about a minute, pour in the hand crushed tomatoes- as much as you want to get the consistency you like.

Cover this lightly and let it simmer for about an hour. Add the cayenne pepper, and sea salt to your taste.

Chop up some raw onions and green onions for the garnish, and serve all day long!
