1 whole Chicken
175ml chicken stock
600ml dark soy sauce
150 ml light soy sauce
300ml Shaoixing wine
175g sugar
5 whole star anise
5 whole cinnamon
5 tablespoons cumin seeds
1 thumb size piece of peeled ginger sliced
1 whole chilli sliced in half.
Make up the marinade in a pot and bring to the boil, Then add the whole chicken and cook for 30 minutes make sure this only simmers and does not boil. Switch the oven off and leave the chicken to marinade for a couple of hours. Then reheat gently and serve with fluffy jasmine rice and some steamed Chinese vegetables.

Remove the chicken from the sauce and place on a platter on top of some steamed jasmine rice.
Serve with chopped fresh coriander on top to garnish.
I normally serve this with some steamed Chinese vegetables.
