1/2 teaspoon saffron threads
250ml stock
3 tablespoons olive oil
3 onions chopped finely
1 tsp ground ginger
1 tsp cumin
3 garlic cloves crushed
6 chicken thighs skin removed
1 tsp black pepper
6 small preserved lemons chopped
100 g green olives stones removed
100g chopped dried apricots
250 ml of chicken stock
Fresh parsley 1 tablespoon to garnish at the end
Fresh coriander 1 tablespoon to be added at the last minute.

1. Dissolve the saffron in warm to infuse
2. Heat 1 tablespoon of olive oil to a heavy bottom pan and fry the onions, garlic and spices. Add the chicken and fry for a few minutes. Add salt and pepper to taste. Add lemons, olives, apricots, stock and simmer for one hour. You can do this with a lid in the oven or on top of the stove but keep an eye on the liquid in the dish. Add more water if this dries out. Serve garnished with fresh parsley and coriander.
Serve with couscous.
