2½ c flour
1 c brown sugar
¾ c white sugar
¾ c veg oil
½ t salt
1 t cinnamon
½ t allspice, opt
⅓ c chopped walnuts or pecans, opt
⅓ c coconut flakes, opt

1 t baking soda
1 t baking powder
1 c buttermilk
2 eggs

Directions:

Preheat oven to 350º.

Mix together flour, sugars, veg. oil, salt, cinnamon, and allspice, if desired.

Save ½ c for the topping. Add nuts and coconut to topping if desired.

To the remaining crumbs mix in baking soda, baking powder. Then add buttermilk and eggs.

Mix 4 min. Pour into two 4x8 loaf pans, or one loaf pan and 9 muffin tins.

Put crumb mixture on top.

Bake loaf pans for 45-50 min or until toothpick comes out clean. Bake muffins for approx 20 min.
