1 chuck roast
2 c. Mass River Organic Root Medley (sold at Costco freezer section)
4 c. fingerling potatoes
3 bell peppers (any kind) chopped
2c. beef broth
1 yellow onion chopped
6 Campari quartered
2 heaping tablespoons bacon grease (or butter)
4 Tbsp. Mixed Spice blend with Turmeric and Saffron
(If you don't have it just add Turmeric, onion powder, saffron)
1 tsp. Smoked Spanish Paprika
1 tsp. Cayenne pepper
1 tsp. pepper
1 tsp. salt
1 (6 oz.) can tomato paste

I made this in my Instant Pot

Hit the "Saute" button on your Instant Pot and add the bacon grease or butter and add to the pot chopped onions and sweat them (cook till clear, not browned), add all spices, garlic and diced peppers. Saute should be off by now. If not just hit the cancel button. Add beef broth, tomato paste, potatoes, roots vegetables and chuck roast cut into large chunks. Put the lid on and make sure you have your steam release valve on "sealing" (make sure you have your seal ring in place. Hit the "stew" button and wait for it to cook. It should be finished in less than 90 minutes with the "sealing" process included.

I was going to make a Hungarian goulash and realized I didn't have Hungarian Paprika. I decided to make it using these ingredients. I didn't use noodles because everyone is watching carbs. My family liked it so much and wanted it again. I thought I'd write it down so I don't forget. It is very savory and deliscious.
