1 eggplant, ½-inch thick slices
1 zucchini, ½-inch thick slices
4 tomatoes, quartered
1 onion, quartered
1 tbsp. olive oil
3 tbsp. balsamic vinegar
½-1 pound box bowtie pasta (farfelle)

Directions:
Directions:
Cook pasta according to directions. Brush vegetable with oil and place on grill screen or mat, flip vegetables and cook evenly with little char marks (you can also roast veggies in oven on 400º for 30 minutes). Pull from grill and cover with foil for 10 minutes. Once pasta is done, drain and rinse. Remove foil from veggies and take two knives, using a cross-hatching motion to cut them up. Add to pasta, stir. Add in oil and balsamic vinegar, stir. May add additional balsamic if needed.
