1 lb pinto beans
3 T butter or olive oil
1 onion, chopped
2 tsp minced garlic
1/2 bunch cilantro, chopped
2 tsp chili powder
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/4 tsp black pepper
4 cups chicken broth
1-2 cups water
salt to taste

Directions:
Directions:
1. Rinse beans and set aside.
2. Heat butter or oil in pressure cooker.
3. Saute onions in the pressure cooker long enough to soften, about 2 minutes.
4. Add garlic and cook for about 30 seconds.
5. Add fresh cilantro, chili powder, cayenne pepper, ground cumin, and black pepper allowing flavors to bloom, stirring regularly, about 30 seconds.
6. Add chicken broth and water.
7. Add rinsed beans.
8. Cook at high pressure for 35 minutes.
9. Allow beans to depressurize naturally.
10. Salt to taste, partially drain, then mash with a potato masher or emulsion blender.
