Canola oil
2 lbs. separated chicken wings (drumettes and wingettes)
2 large egg whites
1 tsp. Baking Powder
1 tsp. Kosher salt
3 tbsp. Unsalted butter
1/2 cup Frank’s Red Hot Original
Salt and pepper to taste
Assorted vegetables (carrots, celery, radishes)
Bleu cheese dressing

Directions:

Oil a wire rack set over a baking sheet
Place the egg whites, baking powder and salt in a bowl and stir to dissolve
Toss the wings in the egg white mixture, remove and allow excess to drip; transfer to the wire rack
Refrigerate the wings overnight to dry out

Remove wings from the fridge 30 minutes before cooking

Preheat oven to 450º
Bake wings (on the wire rack) for 20 minutes.
Flip and bake another 10-15 minutes until crisp and golden

In a small saucepan over medium heat, add butter and hot sauce and stir until butter is melted, about 2 minutes
Season wings with S&P and toss in the sauce. Serve with veggies and cheese
