Spaghetti and meatballs Recipe

For the sauce:

1 lb ground chuck
1 lb hot or mild Italian sausage sliced
1 onion chopped
5 cloves garlic chopped
32 oz diced tomatoes (since we do not like pieces of tomato we put these in a food processor first)
2 15 oz cans of tomato sauce
1 6 ox can tomato paste
1 cup beef broth
2-3 tbsp. garlic powder
2-3 tbsp. onion powder
2-3 tbsp. oregano
2-3 tbsp. parsley
2-3 tbsp. basil
1-2 tbsp. cumin
Salt and pepper to taste

For the meatballs:

2 lbs. ground beef
1/2 chopped onion
3 cloves garlic chopped
2 eggs
2 tbsp. garlic powder
2 tbsp. onion powder
2 tbsp. oregano
2 tbsp. parsley
2 tbsp. basil
1 tbsp. pepper
1 tsp. salt
1/2 cup shredded parmesan cheese
1/2 cup Italian seasoned bread crumbs

Start this recipe early in the day. It's best after simmering for 4-5 hours.

For the meatballs:

Preheat oven to 400 degrees.

Mix the meatball ingredients together in a large bowl and hand roll into balls. Makes 30ish small meatballs or 15-20 larger meatballs.

Place meatballs on a parchment paper lined baking sheet and bake for 20-25 minutes.

Remove from oven and set aside.

For the sauce:
In a LARGE pot or dutch oven, brown the italian sausage in small amount of olive oil. Remove from pan and set aside.

Brown the ground beef. Drain the grease. Season the meat with a little of each of the above spices. Remove from pan and set aside. Saute the onion and chopped garlic in a small amount of olive oil. Add the ground beef, tomatoes, tomato sauce, tomato paste, beef broth and spices. Stir well. Bring to a good simmer, cover and let simmer for 3-4 hours. Taste the sauce every now and then and add spices to taste. By now your kitchen should smell like an Italian restaurant! Add the meatballs and italian sausage to the sauce and simmer for one more hour.

Serve with spaghetti noodles and garlic bread.

We enjoyed this recipe with all of the kids and their families and had Donna, Curtis, Ryan, Ethan, Gina, Glen and Kiley one New Years Eve. We should have made it a tradition. Good times!
