2.5 Pounds Fresh Brussel Sprouts
1/4 C + 1 T Olive Oil
1 3/4 t Kosher Salt
3/4 t Ground Black Pepper

Directions:
Preheat oven to 400º. Clean Brussel Sprouts, take off the yellow leaves. I like to cut the Brussel Sprouts in half. Put the Brussel Sprouts in a ziplock bag, along with the olive oil, salt and pepper. Make sure all the Brussel Sprouts are coated with the oil. Put on a baking sheet.

Bake/Roast for 30-45 Minutes. Shake every 5-7 minutes, and rotate the pan every 20 minutes or so.

Check to see how you like them, some like more roasted and crispy then others, so keep an eye on them! Sprinkle with Kosher Salt when you take them out of the oven.

Notes: I like them cut in half, you can leave them whole. If you leave them whole, cut an X on the bottom of the Brussel Sprout. I have also quarterd them before, but I believe the best flavor is cut in half.

We made this one Christmas Holiday to fill the Green Vegetable for our Christmas Menu. When they were done, dinner wasn't quite ready just yet, so I just turned off the oven and let them sit. By the time we were ready to serve dinner, I went to the oven and yikes, they were a little more crispy than planned, which ended up being the best Brussel Sprouts we have ever tasted. I put them in a bowl, and they were half gone by the time they reached the table. There was not one Brussel Sprout left on any plates! Hallelujah! Everyone ate their green vegetables!!! Needless to say, they were a hit, and we always have them now at our Holiday dinners.
