1 lb bacon, chopped
2 stalks Celery, diced
1 onion, chopped
3 cloves garlic, minced
8 potatoes, peeled and cubed
4 cups chicken stock
3 tbsp butter
⅓ cup flour
1 cup heavy cream
salt and pepper to taste

Directions:
Directions:
* In Dutch oven or soup pot, cook bacon, remove and set aside. Drain all but ¼ cup of bacon grease.
* With remaining bacon grease in pan, saute celery and onion until onion is translucent. Add garlic and continue cooking for 1-2 minutes. Add potatoes and toss to coat. Saute for three to four minutes.
* Return bacon to pan and add chicken stock. Cover and simmer until potatoes are tender.
* In separate pan melt butter, whisk in flour. Cook stirring constantly for 1-2 minutes. Whisk in cream. Bring mixture to a boil and cook stirring until thickened.
* Add cream mixture into potato mixture and stir well. Add salt and pepper to taste.
* You can add a cup or two of cheddar cheese also to make it even better. Enjoy!
