3 eggs, beaten
2 c sugar
1 c veg oil
2 t vanilla
1 T cinnamon
1 t baking soda
1 t baking powder
1 t salt
¼ t allspice
3 c flour
3 c shredded zucchini
1 c nuts, opt
⅔ c mini chocolate chips, opt

Directions:
Directions:
Preheat oven to 350º.

Line 2 (8x4) baking pans with waxed paper.

Beat eggs, sugar, and veg oil together, scraping bowl constantly, for about one minute until mixed well.

Combine dry ingredients and gradually stir into egg mixture.

Stir in zucchini, vanilla, and opt nuts and choc chips if desired.

Pour into pans. Bake approximately 60 min or until toothpick inserted in middle comes out clean.

Can also be made into approximately 20 muffins. Bake muffins about 20 min.
