1 Tablespoon Miso Paste
1 Tablespoon Rice Wine Vinegar
1 Tablespoon Rice Malt syrup
1 Tablespoon of vegetable oil
6 Salmon fillets skin removed approximately 150 grams each.
1 Tablespoon of grated fresh ginger
1/4 cup of soy sauce
2 tablespoons of mirin
1 tablespoon of sesame seed oil

2 teaspoons black sesame seeds for garnish and presentation at the end.

Directions:
1. Cook the noodles according to the packet instructions and drain under cold water.

2. Combine the miso paste, rice wine vinegar and syrup together ass the salmon and marinate for a couple of hours.

3. Remove salmon from the marinade and cook in the oven for 7 minutes or until done.

4. Place the noodles in a bowl with the ginger, soy, Mirin, sesame seed oil and toss in this sauce. Place salmon on top of these noodles and garnish with chopped spring onion, top with black sesame seeds. You can also add some sugar snap peas that have been blanched and cut on the diagonal to give this dish a fresh element.
