1 lb fresh asparagus
1 T grated orange rind
1/4 c fresh orange juice
1/3 c evoo
1/4 c balsamic vinegar
1 t dijon mustard (I use whole grain)
1/2 t salt
1/4 t pepper
1 lb. mixed greens (optional)
4 cooked bacon slices, crumbled (optional)
orange rind strips

Snap off tough ends of asparagus, put the good parts in a shallow dish

Combine orange rind and next 6 ingredients in a jar; cover tightly. Shake jar vigoursly. Pour 1/3 of vinaigrette over asparagus; cover and chill 1 hour. Drain.

Grill asparagus, covered with grill lid, over medium high heat (I use a metal vegetable grill thing), 8-10 minutes or until crisp-tender. ool

Toss together salad greens, remaining vinaigrette, and, if desired, bacon; mound onto 4 plates. Tie asparagus into 4 bundles with string. Cover string with orange rind strips. Chill for 1 hour.

I don't do this nearly as 'fancy' as the recipe indicates. I marinate the asparagus, then grill it, and add the crumbled bacon with the orange rind strips on top. DE-licious!
