Yukon gold potatoes 4 large
Grated Parmesan cheese 2 oz
Coriander seeds 1/4 cup
Olive oil
Salt, pepper to taste

Directions:
Directions:
Scrub and cut potatoes into 1 inch pieces (don’t peel)
Crush coriander seeds
Toss potatoes, seeds, oil, salt and pepper together in a bowl
Finely grate Parmesan. Arrange in a 12x6 rectangle on an oiled rimmed baking sheet. Place potatoes on top of the cheese, covering the cheese.
Bake at 450 degrees in upper third of oven for 30 minutes or until potatoes are brown, crisp, cheese melted and golden.
Scrape up potatoes off baking sheet, breaking up any that are stuck together.
Serve as side dish.
