1 head cauliflower - cored
1 small red onion, peeled and diced
1 delicata squash, cut up
1/4 c Wegman's basting oil or evoo
If using evoo, then add seasonings (garlic powder, onion powder, and whatever else you want)
1/2 package fresh baby spinach
salt and pepper to taste

Directions:

Preheat oven to 450.

Cut cauliflower and squash to be about the same size.

Toss together with onion and oil. Arrange in a single layer on baking sheet.

Roast on center rack 30 minutes or until tender.

Add spinach to large bowl. Add cooked cauliflower-squash mixter. Toss to wilt spinach. Season to taste with salt and pepper.
