1- 2 lb pumpkin (I use pie pumpkin but I don't really know the difference)
1 T olive oil
1/2 t salt and 1/2 t pepper
3 oz sliced feta cheese
1/4 c cilantro
pumpkin seed oil to taste (optional)
sherry vinegar (to taste)

Directions:
Directions:
Peel and seed the pumpkin and cut into 1/2" thick wedges. Toss with the olive oil and salt and pepper.

Roast in a 450 oven, turning occasionally, until tender. about 20 minutes

Layer pumpkin with sliced feta and ilantro. Drizzle with pumpkin seed oil and sherry to taste.

I made this with left-over pumpkin, and I didn't have the oil or the sherry vinegar. It was awesome!
