1 tablespoon shortening
4 potatoes
2 onions
2 carrots
2 tablespoons olive oil
1 chicken
Salt and pepper
Italian Seasoning or Lemon Pepper

Directions:
Directions:
Preheat oven to 425 degrees.
Put shortening in roasting pan and put in oven to melt.
Cut vegetables and toss with the olive oil, salt and pepper.
Put the vegetables in the roasting pan.
Wash and dry the chicken.
Sprinkle chicken with Italian seasoning or lemon pepper.
Put a roasting rack on top of the vegetables.
Put chicken breast side up on rack, bake 15 minutes.
Turn chicken breast side down.
Reduce oven temperature to 375 degrees.
Roast chicken and vegetables 1 hour.
Turn chicken breast side up.
Check for doneness of vegetables.
Roast another hour, until done.
