1 garlic clove, unpeeled
1 T dijon mustard (I use whole-grain)
3 T balsamic vinegar
salt and pepper to taste
1 c best quality evoo (I can't bring myself to use this much - usually use 1/2 - 3/4 c)

Directions:
Directions:
Cut the garlic clove in half and rub the cut sides over the inner surface of a small bowl. Reserve the garlic.
Whisk mustard and vinegar together in the bowl. Season with salt and pepper to taste.
Dribble oil into bowl in a slow steady stream while whisking, until dressing is creamy and thickened and all the oil is incorporated.
Taste and correct seasoning. Add reserved garlic pieces, cover the bowl and let the dressing stand at room temperature until you need it. Remove garlic and re-whisk before using.

Makes about 1 1/4 cups, and will stay good in fridge for a few days.
