Grilled Swordfish with Orange Basil Butter Recipe

4 swordfish steaks
4 T softened butter (I always use sweet, but the original recipe calls for unsalted)
1 t grated orange peel
1 t Grand Marnier or Grand Gala (orange liqueur)
2 T chopped fresh basil leaves
1 T chopped fresh parsley
salt and pepper to taste
no-stick cooking spray

You will also need a small bit of wax paper and plastic wrap. You can do it without the wax paper though...

In a small bowl, stir together softened butter, orange peel, liqueur, basil and parsley. Spoon mixture into a mound on a sheet of wax paper. Press butter into a log. Wrap in plastic wrap and refrigerate.

Meanwhile preheat grill to med. high. Lightly spray both sides of fish with no-stick cooking spray. Grill for 4 minutes on each side (I like mine a bit more well-done).

Cut butter into 4 rounds. Place one round on each steak, sprinkle a little extra parsley on top, and serve.
