1-pound (450 g) Brussels sprouts, trimmed
1 cup (250 mL) chopped bacon
1 cup (250 mL) canola oil
1 apple, cored and thinly sliced (we use Cortland)
1 tablespoon (15 mL) sesame seeds
2 teaspoons (10 mL) red chili flakes
2 teaspoons (10 mL) kosher salt
2 tablespoons (30 mL) Umami Sauce

1. Cut the sprouts in half lengthwise. Set aside.
2. Heat a large, heavy skillet over high heat. Add the bacon and cook until crispy, stirring frequently, about 10 minutes. Using a slotted spoon, remove the bacon and set aside. Drain off the bacon fat and wipe out the skillet.
3. Heat the canola oil in the skillet over medium-high heat. When the oil is just short of smoking, carefully place the Brussels sprouts cut side down in the oil. Reduce the heat to medium and sear on one side until nicely browned, about 3 minutes. Turn the sprouts over and cook on the other side until nicely browned and tender, 3 to 5 minutes. Some of the leaves will be charred dark brown or black, which is fine. Drain the Brussels sprouts on paper towels. Transfer to a medium serving bowl.
4. Add the bacon, apple, sesame seeds, chili flakes, and salt; toss gently to mix. Serve drizzled with Umami Sauce.
