1 15 1/2 - 19 oz. can chickpeas
Italiian Sausage
1 tbsp Basil, fresh
1 Onion, small
1 Bunch Spinach
1 Can Diced tomato
1 Salt and freshly ground pepper

Tip ~
You can use Swiss chard instead of spinach.
If no fresh basil, substitute with 1 teaspoon dried basil.
You can substitute seasoned chicken or ground plant based meat for sausage

Directions:
Directions:
Heat the oil in a cast-iron or non-stick skillet over medium-high heat.
Sauté Italian sausage or Chorizo sausage with onions until no longer pink. Remove and set aside.
Add the onions, tomato, and fresh basil and sauté until softened, about 5-6 minutes.
Stir in spinach and cook another 5 minutes. Season with salt and pepper to taste.

TIP: Cook the day before. Like all legumes, the dish tastes even better the next day!
