2 cans - Original RoTel (alternatively you can use additional pickled jalapenos)
1 - 28-oz can of whole tomatoes (alternatively you can used chopped tomatoes)
½ cup - yellow onion, chopped
1 clove of garlic, minced
1 - jalapeno, chopped with ½ of the seeds removed (alternatively you can use additional pickled jalapenos)
¼ teaspoon - granulated sugar
½ teaspoon - salt
¼ teaspoon - cumin
Juice of ½ a lime
½ cup of chopped cilantro or 'coriander' (may need additional depending on your preference)

Directions:
Directions:
1. Add all ingredients into a bender or food processor and pulse until to desired texture is reached.
2. Taste with a spoon - add additional cilantro, lime juice, jalapenos or salt if necessary and pulse again
3. Once you have reached your desired taste, refrigerate for at least one hour.
4. Store in mason jars or Tupperware for up to 1 week
