1 16-oz carton ricotta cheese (either regular or low fat)
1 1/2 c shredded mozzarella, divided (either shred yourself or buy pre-shredded. big taste diff, though)
1 egg
1 10-oz package frozen spinach, thawed and drained very well.
1 t salt
1/4 t pepper
1/4 t dried oregano (or fresh equivalent)
2 jars spaghetti sauce (15 1/2 oz)
1 8 oz pkg lasagna noodles, uncooked
1 c water
grated parmesan cheese (optional)

Directions:

Combine Ricotta, 1 c mozzarella, egg, spinach, salt, pepper, and oregano in a large mixing bowl; stir well.

Spread 1/2 c sauce in a greased 13x9x2-inch baking dish. Place 1/3 of the noodles over sauce, then spread with half the cheese mixture. Repeat layers. Top with remaining noodles, sauce, and 1/2 c mozzarella; pour water around edges.

Cover securely with foil and bake at 350 for 1 hour and 15 minutes. Let stand 15 minutes before serving.

This is a very quick and easy spinach lasagna. I've also done this with meat sauce and it works fine. The water oooks the noodles. It's not as good as the one where you cook the noodles and fuss with them and burn your fingers, but it's faster!
