1 medium onion, finely chopped
4 medium garlic cloves, minced
3 (15 oz.) cans black beans, undrained
1/2 t. red pepper flakes, or to taste
1 t. ground cumin
14½ oz. can chicken or vegetable broth
10 oz. can Rotel tomatoes
11 oz. can yellow corn, drained
Optional: 1 lb. cooked chicken, ham, sausage or turkey sausage

Coat bottom of a large stockpot with cooking spray. Add onion and garlic and cook, stirring frequently, until onions are soft but not brown, about 5 minutes. Place one can of beans in blender or food processor; add sauteed onion mixture, red pepper flakes and cumin. Cover and blend on high until smooth, about 30 seconds. Pour mixture into stockpot. Place second can of beans and broth in blender and puree until smooth; add to stockpot. Stir third can of beans (do not puree first), Rotel tomatoes, and corn into stockpot. Bring to a boil, lower heat to medium and simmer for 20 to 25 minutes. If desired, add pre-cooked meat in last 15 minutes.

I like more whole beans so usually only puree 1 to 1 1/2 cans of beans. You can use a hand operated immersion blender to puree the beans for less mess. Without the meat, this is a FREE FOOD on Weight Watchers. Very tasty and filling. If you add turkey sausage or chicken, it's still a low points recipe.
