4 Italian sausage links- casings removed
1 orange bell pepper, sliced thin
1 red bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1 medium onion, sliced thin
28 oz can of Italian style diced tomatoes
8 oz papperdelle noodles
4 cloves garlic
1/2 cup white wine
Fresh basil & parsley, chopped or julienned
Salt
Pepper
Italian seasoning
Olive oil
Parmesan cheese

Directions:
Directions:
Cook noodles according to package, keep warm.
Heat 1 tbsp olive oil in pan over med-med/high heat
Brown sausage, once done, remove from pan and set aside
In sausage drippings, add onions and cook until carmelized
Add 1/2 tsp pepper, 1 1/2 tsp salt, 1 tsp Italian seasoning
Add peppers and cook until softened, about 4 minutes
Add garlic
Add white wine and reduce
Add tomatoes
Add sausage back to pan, mix well and simmer 5 minutes
Add 1 Tbsp olive oil, parsley and basil
Add noodles, combine well
Add more seasonings if needed
Top with Parmesan cheese
