2 (10oz) Packages Frozen Corn - Thawed and Drained
3 eggs, well beaten
1 tsp grated onion
1/4 cup flour
2 tsp salt
1/4 tsp white pepper
1 Tablespoon Sugar
dash nutmeg
2 Tablespoons Butter
2 cups light cream
1 can (4oz) pimentos, drained and chopped

Directions:
Directions:
Preheat oven to 325º
Lightly Grease a 1 1/2 quart shallow baking dish
combine corn, eggs, onion and mix well
combine flour, salt, pepper, sugar, nutmeg and stir into corn mixture
add butter, cream and pimentos and mix well
pour into prepared baking dish
set dish in a pan and pour water in until 1" depth around dish
Bake uncovered 1 hour, or until pudding is firm and knife come out clean from center
