¼ c coconut oil
1 c milk or milk substitute
1 tbsp apple cider vinegar
8 tbsp maple syrup
1 tsp vanilla extract
pinch salt
1 ¼ c ground almonds or almond meal
¾ c rolled oats
1¼ c gluten free flour
2 tsp (heaping) baking powder
¼ tsp baking soda
1 c (or more) blueberries

1, preheat oven 350º
2. melt coconut oil
3. add milk, coconut oil with vinegar, maple syrup, vanilla, salt, ground almonds and oats
4. sift in flour, baking powder and soda
5. mix well, adding more milk if dry
6. add blueberries and fold in gently.
7, transfer to muffin tins
8. sprinkle with oats
9. bake in oven for 20 minutes
