2 Tbsps. Olive Oil, divided
1 lb Lean Ground Beef or Chuck
1 Large Yellow Onion, diced
5 Garlic Cloves, to taste,minced
4½ cups Chicken Broth, then more to thin as desired
1 14.5 oz. can petite diced tomatoes
1 14.5 oz. can crushed tomatoes
2½ Tbsps. tomato paste
1¾ tsps. dried basil
¾ tsp. dried oregano
½ tsp. dried rosemary, crushed
½ tsp. dried thyme
Dash Salt & Pepper to taste
8 Lasagna Noodles, broken into bite sized pieces
1¼ cups Shredded Mozzarella Cheese
½ cup Finely Shredded Parmesan Cheese
8 oz. Ricotta Cheese
2 Tbsps. Chopped, Fresh Parsley, plus more for garnish

Directions:

1. Heat one tablespoon olive oil in a large pot over medium-high heat.
2. Once hot, crumble beef into pot, season with salt and pepper to taste and cook, stirring occasionally until browned.
3. Drain fat from beef and set beef aside.
4. Heat remaining 1 Tbsp olive oil in pot, add chopped yellow onion and saute until it begins to soften, about 3 minutes.
5. Add in garlic and saute 30 seconds longer.
6. Pour in broth, diced tomatoes, crushed tomatoes, tomato paste and herbs.
7. Bring to a boil, then reduce heat, cover and simmer 20 minutes.ring to a boil, then reduce heat, cover and simmer 20 minutes.
8. Meanwhile cook pasta according to package instructions.
9. In a mixing bowl, using a fork, stir together mozzarella, parmesan and ricotta.
10. Add cooked pasta to soup and thin soup with a little more broth if desired.
11. Stir together cheeses then serve soup with dollops of cheese.

If you plan on serving the soup right away you can also just simmer the noodles with the soup. Add 1 extra cup of broth or water to make up for what the noodles will absorb. They’ll likely take about 12 – 14 minutes to cook with soup.
