1 cup sugar
2+1/2 TB flour
1/2 tsp cinnamon
1 tsp grated lemon rind
1/8 tsp salt
6 medium apples. peeled & thinly sliced
1 unbaked 9" pastry shell
1/2 cup flour
1/4 cup sugar
1/2 cup (2 oz) shredded cheddar cheese
1/4 cup butter, melted

Rum sauce:
1/3 cup sugar
2 tsp cornstarch
1/8 tsp salt
2/3 cup apple juice
2 tsp butter
1 TB DARK rum
1/2 tsp vanilla

Directions:
Directions:
Preheat oven to 400º

Combine first 5 ingredients in a large bowl then add apples & toss gently to coat

Pour into pastry shell ,

Combine all the rest of the ingredients & sprinkle over the apples

Bake for 40 minutes

Serve with Rum sauce

To make sauce, combine sugar, cornstarch, salt & apple juice in small saucepan. Cook over medium heat , stirring constantly, until sugar dissolves & mixture thickens. Remove from heat & stir in butter, vanilla & rum
