1/2 cup cooked rice
1/2 cup canned peaches, drained & chopped
1 medium egg
1 cup skim milk
1/4 tsp lemon juice
dash of nutmeg

Directions:
Directions:
Preheat oven to 350º

Combine rice & peaches in casserole dish

Mix remaining ingredients & pour into casserole.

Place casserole in a pan with 1" water.

Bake for 25 minutes or until set.

Serve hot or cold
