1 1/4 c flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 c butter, softened
1 1/4 c sugar
1 tsp vanilla extract
1/2 tsp salt
2 eggs
1/2 c milk
2 c peeled, cored and sliced apples
3/4 chopped walnuts, toasted

TOPPING
1/4 c sugar
3 T flour
1/2 tsp cinnamon
2 T butter, cubed
1/2 c shopped walnuts, toasted

MUFFIN BATTER
1. Preheat oven to 375º F. Coat top and cups of a jumbo-muffin pan with cooking spray or line cups with paper liners.
2. Stir together flour, baking powder, and cinnamon in a bowl. In another bowl, cream together butter, sugar, vanilla, and salt with an electric mixer until light and fluffy. Beat in eggs, one at a time. Stir in flour mixture alternately with milk, stirring just until incorporated: Fold in apples and walnuts. Divide batter among muffin cups, filling each 3/4 full.

TOPPING
3. Stir together sugar, flour, and cinnamon in a bowl. Cut in butter using a pastry blender or 2 butter knives until pieces are pea sized. Add walnuts, then generously sprinkle over batter in cups.

4. Bake until tops are golden brown and a toothpick inserted into center comes out clean, about 3 minutes. If tops are browning too quickly, cover with foil.

Remove muffin from pans and let cool on a wire rack.
