1 lb new red potatoes, quartered
1/4 c diced onion
2 T butter melted
1 T honey
1 tsp dry mustard
pinch salt
pinch pepper
fresh parsley

Directions:
Directions:
Preheat oven to 375º F
Lightly grease 9x13 baking pan an spread potatoes in a single layer and top with diced onion.
Stir together butter, honey, dry mustard, salt and pepper in a bowl.
Drizzle mixture over potatoes and onions and toss to coat.
Roast, stirring half way through, until tender, about 35 minutes.

Garnish with fresh parsley and serve.
