1 pound of spiral tube shaped pasta

2 TB (1/4 stick) butter
1/4 cup flour
2 cups whole milk
1 cup heavy or whipping cream
3 cups grated cheddar cheese
1+1/2 cups crumbled bleu cheese

1 TB minced fresh chives

Directions:
Directions:
Preheat oven to 350º

Butter 13 x 9 baking dish

Cook pasta in large pot of salted water until tender but firm - about 8 minutes, then drain

Melt butter in a saucepan over medium heat then stir in flour & cook for 1 minute but do not let brown.

Gradually whisk in milk & cream. Simmer until mixture thickens slightly, whisking occassionally, about 3 minutes. Reduce heat to low

Add cheddar cheese & 1 cup of bleu cheese.Whisk until cheese melts, about 2 minutes.

Season to taste with salt & pepper

Add cooked pasta to sauce & stir to coat ( I would probably pour sauce over pasta & stir to coat) then transfer to baking dish

Sprinkle remaining bleu chesse on top then bake for about 25 minutes.

Sprinkle with chives & serve immediately.
