4 thin slices ham or Canadian bacon
2 English muffins , split & lightly toasted
butter
4 eggs
Quick Hollandaise Sauce -
2 egg yolks
1/4 tsp salt
dash of cayenne or white pepper
1 TB lemon juice

Directions:
Directions:
Fry or broil ham slices or bacon.

Spread butter on toasted muffin halves.

Poach eggs

Arrange meat on muffin & top with the poached eggs

Cover with Hollandaise Sauce:
Beat egg yolks with electric mixer until thick & lemon colored. Add salt & pepper & lemon juice & continue beating

Heat butter until melted but do not brown. Add slowly in a steady stream while continuing to beat.
(The sauce will thicken slightly as it cools.)
