12 to 14 ears of corn (9 cups of kernels)
2+1/2 cups distilled white vinegar
1+1/2 cups sugar
1+1/4 cup chopped onion
1+1/2 cup chopped green pepper
1+1/2 cup chopped red pepper
1 TB pickling salt/ spice
2 tsp mustard seeds
2 tsp turmeric
1+1/2 tsp celery seeds
5 pint size canning jars

Remove husks & silk from corn.Cut kernels off the cob but do not scrape the cob.Measure to make 9 cups

In large saucepan, combine vinegar, sugar, onions, peppers, salt, mustard seeds, turmeric & celery seeds. Heat to boiling & boil for 5 minutes, stirring occassionally.

Add corn & return to boil & cook 20 minutes , uncovered, stirring occassionally.

Spoon hot corn mixture into sterilized jars, leaving half an inch from the top.

Follow manufactors' instructions for processing jars for canning
