1 (4 to 5 lb) whole chicken, cut into 8 pieces, or 3 lb chicken pieces
1 lg red onion, cut into wedges
1 lemon, sliced
8 cloves garlic
4 sprigs fresh rosemary, plus more for garnish
1/4 c olive oil
1/2 tsp salt
1/2 tsp black pepper

Preheat oven to 450º F.
1. Add chicken, red onion, lemon slices, garlic, and 4 rosemary sprigs in a large bowl. Drizzle with oil and sprinkle with salt and pepper; toss to coat. Spread mixture in a 10x15 baking pan.
2. Roast 35 to 40 minutes, or until a thermometer inserted into thickest parts of thighs registers 170º F.
3. Garnish with rosemary and serve.
