Potato-Cheese Soup Recipe

3 medium potatoes, peeled & cut up
1 cup water
1 small onion, finely chopped
1 tsp chicken bouillon granules
skim (fat free) milk
3 TB butter
2 TB parsley, sniped
1 TB pimiento, chopped
1 TB flour
1/8 tsp pepper
dash of pepper sauce
1 cup shredded cheddar cheese or Monterey jack cheese with jalapeno peppers

Directions:
Directions:
In a large saucepan, combine potatoes, water, onion & bouillon. Bring to a boil, then reduce heat, cover & cook over medium heat about 20 minutes or potatoes are tender.

Transfer hot potato mix into a blender or processor & blend until smooth - BE CAREFUL !!!!

Add enough milk to mixture to measure 5 cups total.

Return mixture to saucepan.

In separate small bowl, mix parsley, pimiento, flour, pepper & pepper sauce & stir into potato mixture. Cook & stir until thickened & bubbly

Add cheese & continue to stir until cheese melts.

Serve immediately with more cheese sprinkled on top.
