1/4 cup flour
1 pound ground beef chuck or other tender beef cut into 1/2" cubes
1 medium onion, diced
1 TBSP Roasted, minced garlic, (more to taste) more to taste
1/3 Tsp. Ground Thyme
1/3 Tsp. Dried Basil
1/3 Tsp. Salt
1/2 Tsp. Black Pepper
2 (10 oz) Condensed Cream of Mushroom Soup
1 cup Beef Broth
1/4 cup red wine (Merlot or Cab)
8 oz. mushrooms (your favorite) cleaned & sliced
3/4 cup full fat cup Sour Cream

16 oz Pkg of GOOD egg noodles

Directions:
1. Place flour in bowl and add meat chunks. Toss to coat.
2. Heat a large skillet over medium-high heat.
3. Add beef and onion. cook to brown meat. onions should be translucent, not burned.
4. Add garlic and continue to cook for 3 minutes, stirring to avoid sticking.
5. Add red wine to deglaze the pan. scrape the bottom to pick up the cooked bits that will add flavor to the dish.
6. Add thyme, basil, salt, and pepper. toss to bring out flavors of the herbs about 1 minute.
7. Add cream of mushroom soup, beef broth, and mushrooms. Reduce heat and simmer until flavors meld, about 20 minutes. Fold in sour cream just before serving.

while Stroganoff is cooking, prepare egg noodles. cook to your liking, Al Dente is best!

Do not mix together, top noodles with sauce and sprinkle with fresh parsley!

the flour you use to toss the beef in will help to thicken the sauce. if you find it is too thin after cooking, mix some corn starch with cold water and add to pot. **use corn starch sparingly! you want a nice creamy sauce, not paste!
