2 cloves of garlic, crushed
2 pounds medium size tomatoes (about 6 ), peeled & chopped
1 medium size cucumber, pared & cut into chunks
1 large green pepper, seeded & chopped
2 slices (1 cup) white bread, trimmed & crumbled
1/4 cup red wine vinegar
2 cups tomato juice
1 cup water
1/4 cup olive or vegetable oil
1/2 tsp salt
1/4 tsp freshly ground black pepper
Cucumber slices
1/2 cup chopped green onion
1/2 cup garlic croutons
1/2 cup chopped green pepper

Directions:
Directions:
Combine garlic, tomatoes, cucumber, green pepper, bread & vinegar in blender or food processor. Whirl until smooth

Press mixture through sieve, discarding the solids.

Add tomato juice, water oil, salt & pepper to sieved tomato liquid & chill well

Serve in chilled bowls garnished with cucumber, onions, croutons & peppers
