Ingredients: 1 cup creamy peanut butter ¾ cup brown sugar ½ tsp. soda pinch of salt 1 large egg 1 tsp. vanilla
For the Ganache 1 small bag of chocolate chips or a little more 2 tbsp. butter ⅓ cup whipping cream

Directions: |
Directions:Preheat oven to 350. Prepare two mini muffin pans by lightly spraying with cooking oil. Beat the peanut butter, sugar, baking soda, and salt at medium speed with your mixer, until well blended. Add the egg and vanilla and blend on low until mixed. Scoop the dough by a tbsp. into each cupcake well. Shape with your hands. Dough must be pressed on the bottom and sides. Bake the cookies for about 7 - 8 minutes. Cool. The dough may puff up in the oven, just press down the middle. I learned do not press down too hard or they will not come out well. Ganache Put the chocolate chips in a bowl. Heat the milk and butter in a sauce pan over low but not boiling. Pour the heated milk and butter over the chips. Let sit about 4 - 5 minutes and then beat until smooth. Fill with ganache and top with 3 Cadbury eggs.
I took out the nests when they were cool and placed them on a cookie sheet for easier filling. |
