1 lb. fresh pasta or best-quality dry (like De Cecco)
1 stick butter (I use Kerry Gold)
4 Tablespoons heavy cream (not light, not half and half, not milk)
2 T salt (for pasta water)
1 1/2 c grated Parmegiano reggiano

Directions:
Directions:
Put on a large pot of water to boil (like 16 cups).
While you are waiting for it to boil, melt the butter in a saucepan. Let it melt but not sizzle. Add the cream and stir it in.
When the water is boiling, throw in the salt, the plunge the pasta. Stir well. If the pasta is fresh, wait until the water returns to the boil and count to 20. If using dry, follow the directions to cook al dente (this is the most important part).
Drain the noodles well in a colander, then toss into the butter and cream over low heat. Add the cheese. Toss together for about 30 seconds so that the cheese melts and the whole thing comes together. Serve on a warm plate, if possible.
