Ingredients:  
-6 cups chicken broth
-1 can stewed tomatoes
-1 white onion
-1 stalk celery
-A few large carrots
-1 can of kidney beans (white or red, or both)
-Handful of baby spinach
-1 clove minced garlic
-1 teaspoon olive oil
-Salt, pepper, oregano to taste
-Optional: 1-2 cups of rotini pasta

Directions:
Directions:
1. Chop and sauté onion, celery and carrot in olive oil garlic. Season with salt, pepper, and oregano.

2. Combine chicken broth, tomatoes, and beans over medium heat.

3. Once sautéed and tender, add carrots, celery, and onion to rest of soup.

4. Cook over medium heat for 1-2 hours. Add spinach leaves and rotini noodles and cook for another 30 minutes.
