3 pound fryer, cut up into 8 pieces
1/2 cup olive oil
2 cups chopped onion
1 garlic clove, crushed
1/2 tsp crushed red pepper
2+1/2 tsp salt
1/2 tsp pepper
2 cups raw converted white rice
1/4 tsp saffron threads
1 large can tomatoes, undrained
1 canned green chill pepper, chopped
1 can condensed chicken broth, undiluted
1/2 (10 oz) bag frozen peas
1/2 cup pimiento stuffed green olives, sliced
1 can (4 oz) pimientos, drained & sliced

WIpe chicken pieces with damp paper towels

In heavy 6 qt Dutch oven, heat oil. Brown chicken, few pieces at a timeuntil golden brown all over.Remove chicken as it browns

Heat oven to 325º.

Add onion, garlic & red pepperto Dutch oven. Saute over medium heat , stirring until golden - about 3 minutes

Add salt, pepper, rice & saffron threads to Dutch oven .Cook, stirring, 10 minutes until rice is lightly browned

Add tomatoes, chile pepper & chicken broth to rice mixture. Add chicken. Bring to a boil. place in oven & bake for 1 hour.

Add 1/2 cup water. Sprinkle peas, olives & pimiento over top. do not stir.

Return to oven & bake 20 minutes longer or until chicken is tender & peas are cooked

Serve hot, right from the Dutch oven
