1/4 cup all-purpose flour...
2 large eggs, beaten...
2 T grated Parmesan cheese...
1/2 cup Italian-style bread crumbs...
4 boneless, skinless chicken breasts, 5 oz. each...
1t Italian Herb seasoning....I use Island Spice...
1/4 cup good olive oil...
4 oz. shredded mozzarella cheese...
3 cups tomato and basil sauce...
8 oz. spaghetti...

Directions:
Directions:
Preheat oven to 400º and put on a pot of water with a teaspoon of salt over medium heat...
Place flour in a shallow bowl, place eggs in another bowl, beat them...
Place the Parmesan cheese in a third bowl...
Season chicken on both sides with the Italian herb seasoning...
Dredge chicken in flour, coating both sides, dip into beaten eggs and let excess to drip off, now dip chicken in the Italian bread crumbs, pressing with your fingers to be sure crumbs adhere to chicken...
After coating each breast lay it on a large plate...
Preheat oil in a large skillet, add chicken and cook for 2 1/2 minutes on each side or until browned...
Transfer chicken to a baking sheet, top each breast with the mozzarella cheese and bake until the cheese melts....

Mean while you bring water to a rolling boil, add the pasta and cook to the package directions...
Drain pasta, add some sauce and place breast of chicken on top of spaghetti and add some more sauce on top of chicken...

I like Mi’s spaghetti sacue, Publix carries this brand....but the tomato basil sauce,,,I also buy or get from my garden fresh basil...
Use this for just more flavor, place leaves in a bowl, pass to those who would like more flavor, they can tear the leaves and put on chicken and spaghetti......
Add a salad and crusty bread and red wine......ENJOY,
