2 cups broccoli florets about ½ pound
5 large eggs
¾ cup milk
½ teaspoon salt
¼ teaspoon pepper
1 cup shredded cheddar cheese
1 9-inch pie crust (I use frozen pre-made)

Directions:
Directions:
* Place 1-2 cups water in bottom of small pot. Add broccoli, cover, and bring to a boil. Cook broccoli until crisp-tender, about 4 mins. Transfer broccoli to a colander, rinse with cool water, drain. Chop into small pieces.
* In large bowl, whisk together eggs, milk, salt, pepper. Stir in broccoli and cheese. Pour into prepared pie shell.
* Bake at 375º for 40-50 mins until eggs are set in the center. Check on quiche starting at 25 mins and tent with foil if crust is browning too quickly.
* Let stand 5 minutes before serving.
