Chicken Balls and Batter

3-4 bone-in Chicken Breasts, thawed
1 Egg, beaten
⅓ c. Milk
1 tbsp. Canola Oil
½ c. Flour
½ tsp. Salt

Boil chicken breasts in large pot for 20-30 minutes. Remove from water and cover, let cool. While waiting for chicken to cool can start other steps.

Once cool enough to touch, chunk chicken into 1 ½ inch balls, set aside. Any remaining chicken strands and pieces should be set aside for the fried rice, as well.

When ready to deep fry the chicken, whisk eggs and milk together. Add the rest of the ingredients together, whisk until smooth. If too thick, add a drop of water or milk.

Set deep fryer to 325ºF. Dip chicken chunks into the batter, coat well. Once fryer fat has heated, drop chicken slowly into the fat, making sure to move the basket to prevent the balls from sticking on to the basket. Cook until batter is light golden brown. Remove from basket, place on a deep plate lined with a paper towel.
 

Fried Rice

2 c. White Rice
Butter/Oil
1 medium Onion, chopped
2 Eggs
⅓ c. Milk
1 Bell Pepper (coloured preferred)
Soya Sauce

Cook rice per directions in large saucepan, set aside. In a fry pan, melt butter/heat oil and fry onions until just starting to turn translucent. Add peppers. Once heated through, add to rice. In a separate bowl/mug, beat eggs and milk together. Add this mixture to the fry pan, stirring and chopping constantly as it cooks. Once just cooked and thoroughly chopped, add to fry pan as well. Add soya sauce to rice to preference, to give colour and flavour. Keep in saucepan until near serving time. Before serving time, reheat mixture in the fry pan until heated through.

 

Sweet and Sour Sauce

½ c. Sugar
1 ½ tbsp. Corn Starch
⅓ c. Vinegar
½ tbsp. Canola Oil
2 tbsp. Ketchup
½ c. Water

Combine sugar and corn starch in saucepan. Add remaining ingredients over medium heat until thickened.
