4 slices white bread, torn into pieces
2+1/2 pounds ground beef
1 medium yellow onion, peeled & cut into eighths
2 garlic cloves
2 ribs celery, cut into 2" pieces
2 carrots, peeled & cut into 2" pieces
1/2 cup flat leaf parsley leaves
1 large egg
3/4 cup ketchup
4 tsp dry mustard
1 TB coarse salt
2 tsp freshly ground pepper
2 TB brown sugar

Directions:
Directions:
Preheat oven to 400º

Place bread pieces into a food processor & pulse until crumbs form

Pour into large bowl & add beef


Place carrot, onion, garlic & parsley into processor & pulse until finely chopped

Add veggies into meat mixture & combine with your hands.

Add egg, 1/2 cup ketchup & 2 tsp dry mustard, salt & pepper & continue combining with your hands.

Place into loaf pan

Combine remaining 1/4 cup of ketchup, 2 tsp dry mustard & brown sugar in a small bowl until smooth.

Brush over the top of the meatloaf & bake for about 90 minutes or when thermometer reaches 160º
